Ingredients

  • 1 head Romaine Lettuce
  • 1 cup Shredded Carrots
  • 2 cups Shredded Cheese (any Kind I Used White Cheddar)
  • 1 cup Dried Cranberries
  • 2 whole Apples (cored And Cut Into Bite Size Pieces)
  • 1-1/2 cup Walnuts
  • 2 whole Lemons, Juiced
  • 1 whole Avocado, Peeled, Pitted, And Diced
  • 3 Tablespoons Agave Or Honey
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 dash Fresh Ground Black Pepper

Method

  • Chop up lettuce and put it into a large bowl. Add shredded carrots, cheese, cranberries, apples and walnuts.
  • For the dressing: Juice lemons (don't forget to remove seeds). Take juice and avocado and blend it together in a blender. Drizzle in agave or honey and extra virgin olive oil as you continue to blend. Pour over salad.
  • Add fresh ground black pepper.
