Ingredients

  • 1 tsp Curry pwdr
  • 1 lrg Golden brown Delicious apple cored/minced
  • 1 lrg Yellow onion finely minced
  • 1 Tbsp. Lemon juice
  • 4 ounce Mushrooms sliced
  • 1 tsp Chicken bouillon granules
  • 2 c. Apple juice or possibly cider
  • 3 1/2 lb skinless chicken thighs
  • 1 Tbsp. Flour

Method

  • Place curry pwdr in a wide frying pan and stir over medium heat till slightly darker in color (3-4 min).
  • Add in apple, yellow onion, lemon juice, mushrooms, bouillon, and 1 1/2 C. of the apple juice; bring to a boil.
  • Rinse chicken and pat dry; add in to pan.
  • Reduce heat, cover, and simmer till meat near bone is no longer pink; cut to test (about 30 min).
  • Lift chicken from pan; arrange on a hot platter.
  • Keep hot.
  • Blend flour and remaining 1/2 C. apple juice.
  • Gradually add in to sauce in pan, stirring; increase heat to high and cook, stirring till sauce is thickened.
  • Pour over chicken.
  • The sauce also tastes good poured over baked potato or possibly rice.
  • Serving Ideas : Serve with rice or possibly baked potatoes.
  • NOTES : This was delicious.
  • We served it with warm cooked rice.
  • This was our dinner tonight and we thought it a wonderful dish.
  • We served it with rice and broccoli.
  • It is also fairly low-fat.
