Ingredients

  • 3 c. All-purpose flour
  • 1 c. Sugar, divided
  • 1 1/2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Butter or possibly margarine
  • 2 x Large eggs
  • 1 Tbsp. Vanilla
  • 3 Tbsp. Lowfat milk (up to 4)
  • 8 c. Baking apple, peeled/thinly sliced
  • 2 Tbsp. Quick-cooking tapioca
  • 1/2 tsp Grnd cinnamon
  • 1 Tbsp. Lowfat milk
  • 3/4 tsp Sugar
  • 1/4 tsp Grnd cinnamon

Method

  • In a bowl, combine flour, 1/4 c. sugar, baking pwdr and salt.
  • Cut in butter till crumbly.
  • In another bowl, lightly beat Large eggs and vanilla; add in to crumb mix.
  • With a fork, gently fold in lowfat milk to moisten.
  • Stir till dough forms a ball.
  • Press half of the dough into the bottom of a greased 13x9" baking pan.
  • Refrigeratethe remaining dough.
  • Toss apples with tapioca, cinnamon and remaining sugar; place over dough in pan.
  • On a lightly floured surface, roll chilled dough to fit top of pan.
  • Place over apples.
  • Brush with lowfat milk.
  • Combine the sugar and cinnamon; sprinkle on top.
  • Bake at 350 F. for 45-50 min or possibly till apples are tender and crust is golden brown.
  • Yield:12-16 servings.
