Ingredients

  • 1 whole Granny Smith Apple
  • 1 teaspoon Lemon Juice
  • 1/2 cups Unsalted Butter, Room Temperature
  • 1/2 cups Sugar
  • 1/2 cups Brown Sugar, Packed
  • 1 whole Egg
  • 1-1/4 teaspoon Vanilla Extract
  • 1 cup All-purpose Flour
  • 1-1/2 cup Old Fashioned Rolled Oats
  • 1/2 teaspoons Baking Powder
  • 1/2 teaspoons Baking Soda
  • 1/2 teaspoons Salt
  • 1-1/2 teaspoon Cinnamon
  • 1/4 teaspoons Nutmeg
  • 1/4 teaspoons All Spice
  • 1/4 cups Dark Chocolate Chips (optional)

Method

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Peel, core and dice the apple and toss with the lemon juice in a small bowl, then set it aside.
  • In a large bowl, cream the butter and both sugars together until light and fluffy. Then add the eggs, vanilla extract and mix until fully combined. Set aside.
  • In medium bowl, mix together the flour, oats, baking powder, baking soda, salt, cinnamon, nutmeg and all spice. Add it to the creamed butter mixture and mix until fully combined. Then gently stir in the apple pieces.
  • Next, using a ice cream scoop, scoop the cookie dough on the prepared baking sheets. Place 12 cookies per sheet and bake for 12 minutes or until lightly golden.
  • Once the cookies are done, let them cool on the sheets for 5 minutes before transferring them to a wire rack.
  • This step is optional (but totally worth it!). While the cookies are cooling, place 1/4 cup of dark chocolate chips in a Ziplock bag and put in the microwave. Turn it on high for one minute at a time until chips are completely melted. Let the bag cool for 3 minutes. Then cut a very tiny corner off and use it to drizzle chocolate over the cookies! Enjoy!
