Ingredients

  • 6 large hard boiled eggs, peeled
  • 2 tbsp celery, finely minced
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh lemon juice
  • 1/2 tsp dijon mustard
  • 3 tbsp or more of my Spicy Ranch Dressing, recipe attached in direction step #1
  • 6 slice of bacon, cooked crispy
  • 6 large sturdy romaine, cos or iceberg lettece leaf cups

Method

  • Chop eggs into a bowl add remaining egg salad ingredients except bacon and lettece leaves and mix well
  • Fill each lettece leaf with equal amounts of egg salad, crumble baon eveny over egg salad.
  • Serve with the garnishes of tomatoes, pickles and radishes to sprinkle on if desired
