Ingredients

  • 1 can (5 Oz. Size) Crushed Pineapple (Reserve Juices)
  • 1 cup Plain Greek Yogurt
  • 2 whole Granny Smith Apples (Peeled, Cored, Cut Into Matchsticks)
  • 1 cup Shredded Coleslaw Vegetable Mix (found In The Produce Section)
  • 1 whole Lemon (washed, Zest And Juice)
  • 1 cup Shredded Sharp Cheddar Cheese
  • 1/4 cups Chopped Walnuts

Method

  • In a small bowl add reserved pineapple juice and Greek yogurt and stir to combine.
  • In a large mixing bowl add the drained crushed pineapple, apple sticks, shredded coleslaw veggies, lemon juice and lemon zest. Stir with a spatula to combine. Add yogurt mixture to bowl and stir well. Cover with plastic wrap and refrigerate 1 hour before serving.
  • When ready to serve add the shredded cheese and walnuts and stir again. Serve in individual bowls or plates and enjoy! This is so refreshing!
