Ingredients
- 1 can (5 Oz. Size) Crushed Pineapple (Reserve Juices)
- 1 cup Plain Greek Yogurt
- 2 whole Granny Smith Apples (Peeled, Cored, Cut Into Matchsticks)
- 1 cup Shredded Coleslaw Vegetable Mix (found In The Produce Section)
- 1 whole Lemon (washed, Zest And Juice)
- 1 cup Shredded Sharp Cheddar Cheese
- 1/4 cups Chopped Walnuts
Method
- In a small bowl add reserved pineapple juice and Greek yogurt and stir to combine.
- In a large mixing bowl add the drained crushed pineapple, apple sticks, shredded coleslaw veggies, lemon juice and lemon zest. Stir with a spatula to combine. Add yogurt mixture to bowl and stir well. Cover with plastic wrap and refrigerate 1 hour before serving.
- When ready to serve add the shredded cheese and walnuts and stir again. Serve in individual bowls or plates and enjoy! This is so refreshing!
