Ingredients

  • 1 2/3 c. Flour all-purpose
  • 1 1/2 ounce Cornmeal yellow uncooked
  • 1 Tbsp. Baking pwdr double-acting
  • 3/4 lb Apples cored, pared, finely minced
  • 1/2 c. Whole Kernel Corn, Frzn Thawed
  • 2 1/4 ounce Lowfat Cheddar Cheese shredded
  • 1/3 c. Sugar granulated
  • 1 dsh Cinnamon grnd
  • 1 dsh Nutmeg grnd
  • 6 Tbsp. Corn oil
  • 3 x Large eggs lightly beaten

Method

  • Preheat oven to 400F.
  • Line 12 2-1/2" muffin-pan c. with paper baking c.; set aside.
  • In large mixing bowl combine flour, cornmeal and baking pwdr.
  • Add in apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to combine.
  • In small bowl beat together oil and Large eggs; stir into flour mix.
  • Fill each baking c. with an equal amount of batter.
  • Bake in middle of even for 15 min, till golden brown and toothpick comes out dry.
  • Set pan on wire rack and let cold.
