Ingredients

  • 1/2 pound ground lamb
  • 1/2 pound ground pork
  • 1/2 pound ground buffalo
  • 1 cup fresh bread crumbs (potato bread)
  • 1/2 cup italian seasoned bread crumbs
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons fresh chopped garlic
  • 1/2 cup grated parm cheese
  • 2 teaspoons kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1/4 teaspoon nutmeg
  • 1 extra large egg beaten
  • Vegetable oil
  • Olive oil

Method

  • Place the ground meats, both bread crumbs, basil, parmesan, salt, pepper, nutmeg, egg and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2 inch meatballs.
  • Pour equal ammounts of vegetable oil and olive oil into a pan until 1/4 inch deep, heat on medium low heat. place meatballs a few at a time and cook on all sides until nicely browned. transfer to oven or sauce to continue cooking until cooked through. 375 at 15 minutes.
