Ingredients

  • 1/2 C fresh lemon juice
  • 1/4 C dry white wine
  • 1/4 C oil
  • 1 clove garlic, minced
  • 1t salt
  • 1 t pepper
  • 3 whole chicken breasts, skinless & boneless, halved
  • 1/2 C matzo meal
  • 1 T paprika

Method

  • Mix lemon juice, wine, oil & garlic. Cover & marinate chicken a minimum of 6 hours & preferably overnight in ref rig.
  • Preheat oven to 375.
  • Remove chicken from marinade, reserving marinade. Mix matzo meal, S&P. Dip chicken in seasoned matzo meal, coating completely. Shake off excess. Place coated chicken in greased baking dish.
  • Bake at 45-50 min or until tender, basting w/ reserved marinade @ 15 & 30 min mark in cooking.
