Ingredients
- 1/2 C fresh lemon juice
- 1/4 C dry white wine
- 1/4 C oil
- 1 clove garlic, minced
- 1t salt
- 1 t pepper
- 3 whole chicken breasts, skinless & boneless, halved
- 1/2 C matzo meal
- 1 T paprika
Method
- Mix lemon juice, wine, oil & garlic. Cover & marinate chicken a minimum of 6 hours & preferably overnight in ref rig.
- Preheat oven to 375.
- Remove chicken from marinade, reserving marinade. Mix matzo meal, S&P. Dip chicken in seasoned matzo meal, coating completely. Shake off excess. Place coated chicken in greased baking dish.
- Bake at 45-50 min or until tender, basting w/ reserved marinade @ 15 & 30 min mark in cooking.
