Ingredients

  • 4 chicken breasts or 4 chicken thighs/legs
  • 8 c. water
  • 1 c. chopped celery or celery leaves
  • 1/2 c. chopped onion
  • 1 tsp. salt
  • 1 lb. pkg. noodles
  • 3 chicken bouillon cubes

Method

  • Cook the first 5 ingredients.
  • Bring to boil, then reduce heat and simmer 45 minutes to 1 hour.
  • Remove chicken pieces. Bone when cooled.
  • Chop into small pieces.
  • Bring liquid back to full boil.
  • Add noodles and bouillon cubes.
  • Reduce heat; stir frequently.
  • When done (15 minutes), add chicken.
  • Stir well but gently and serve.
  • Add hot water if too thick.
