Ingredients
- 1 large eggplant
- 1/4 c. butter
- 1/4 c. grated onion
- 2 tsp. Worcestershire sauce
- 2 c. cracker crumbs, fine
- 1/2 tsp. salt
- 1/2 c. grated cheese
Method
- Peel and cube eggplant; cook until tender, stirring often. Remove from heat. Add butter, onion, salt and Worcestershire sauce. Blend together; blend well and add crumbs to absorb all liquid. Cover with cheese. Bake at 350° for 20 to 25 minutes.
