Ingredients

  • 16 oz box of macaroni
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup cream
  • 1 salt and pepper, to taste
  • 2 cup shredded cheddar cheese (good quality)
  • 1/4 box velveeta

Method

  • Preheat oven to 400F.
  • Cook and drain macaroni according to package directions; set aside.
  • In large saucepan, melt butter.
  • Slowly add flour mixed with salt and pepper, whisking as you add, until well blended.
  • Slowly pour in cream and milk, stirring constantly.
  • Bring to a boil.
  • Boil 2 minutes, stirring constantly.
  • Reduce heat and let simmer for 10 minutes, stirring constantly.
  • Add shredded cheddar, little by little, and simmer until cheese is melted.
  • Cube the velveeta into small cubes and add to mixture.
  • Stir until melted.
  • Turn off heat.
  • Add macaroni to the saucepan.
  • Toss to coat with cheese sauce.
  • Transfer macaroni mixture to a buttered baking dish.
  • Sprinkle some cheddar on top and bake for 20 minutes.
