Ingredients

  • 2 ounces dried apricots finely chopped
  • 2 ounces dried pineapple finely chopped
  • 2 tablespoons sliced almonds
  • 2 teaspoons orange zest
  • 5 tablespoons butter softened
  • 1/4 cup light brown sugar
  • 1 egg lightly beaten
  • 1/2 teaspoon baking powder sifted
  • 1/3 cup all purpose flour
  • 1 teaspoon ground ginger
  • 3 1/2 ounces frozen berries mixed
  • 1/4 cup orange juice
  • 1 tablespoon granulated sugar
  • powdered sugar for dusting

Method

  • Preheat oven to 350°F. Grease and line 2 - 8.5 oz ramekins with parchment paper. Combine dried fruit, almonds and orange zest. Set aside.
  • Cream butter and brown sugar until light and creamy. Add egg and beat until combined. Mix in fruit mixture, baking powder, flour and ground ginger. Distribute between prepared ramekins and smooth surface. Cover with parchment paper and foil. Bake for 40-45 mins, or until a skewer inserted in the center comes out clean.
  • Meanwhile, for the mixed berry sauce, combine 3/4 of the berries with orange juice and sugar. Stir over low heat until sugar dissolves. Simmer for 2-3 mins, or until syrupy. Fold in remaining berries. To serve, drizzle sauce over cakes and dust with powdered sugar.
