Ingredients

  • 2 large eggs
  • 1/2 c. almond paste
  • 1 recipe basic cookie mix
  • 36 whole blanched almonds
  • sugar

Method

  • Preheat oven to 350°.
  • Lightly grease two large baking sheets. In large bowl of electric mixer, combine eggs and almond paste.
  • At medium speed, beat 5 minutes or until mixture is light and creamy. Add cookie mix; at low speed, beat until mixture forms a dough. Roll rounded teaspoonful of dough into a ball.
  • On a sheet of waxed paper, place sugar.
  • Roll dough ball in sugar to coat.
  • Place ball on prepared baking sheet; flatten slightly with palm of hand. Gently press an almond into center of dough.
  • Repeat with remaining dough, placing cookies about 1 inch apart on prepared baking sheets.
  • Bake 12 minutes or until cookies are golden.
  • With metal spatula, transfer cookies to wire rack to cool.
  • Yields 3 dozen.
