Ingredients

  • 2 c. chopped Granny Smith apples
  • 1 1/2 c. sliced almonds
  • 3/4 c. chopped onions
  • 3/4 c. chopped celery
  • 4 Tbsp. butter
  • 1 tsp. ground cinnamon
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. salt
  • 6 c. cubed whole wheat bread
  • 1 c. raisins
  • 1 egg, lightly beaten
  • 1/3 to 1/2 c. apple cider or juice

Method

  • Saute apples, almonds, onion and celery in butter for 5 minutes, stirring frequently. Remove from heat. Stir in cinnamon, poultry seasoning and salt. Toss together bread cubes and raisins. Add apple mixture.
  • Stir egg in 1/3 cup apple cider. Toss into bread mixture. Add remaining apple cider if a moister stuffing is desired.
  • This will stuff a 15 to 20 pound turkey or 2 large roasting chickens.
  • Spoon any remaining stuffing into a lightly greased 9 x 5-inch loaf pan. Bake, covered.
  • Makes 10 cups.
