Ingredients
- 1 each onions chopped
- 1 teaspoon canola oil
- 1 teaspoon curry powder
- 10 ounces soup, tomato condensed, about 1 can
- 14 ounces chicken broth, low salt 1 can, or 1 3/4 cups water
- 2 tablespoons peanut butter natural
- 1 tablespoon cilantro freshly chopped
- 1 x salt to taste
- 1 x black pepper freshly ground to taste
Method
- Heat oil in a medium saucepan, saute onion until softened, 3 to 5 minutes.
- Stir in curry powder and cook, stirring, for 1 minute more.
- Add condensed tomato soup and broth or water.
- Bring to a simmer.
- Whisk in peanut butter and cilantro.
- Season with salt and pepper.
- Serve hot.
