Ingredients

  • 1 each onions chopped
  • 1 teaspoon canola oil
  • 1 teaspoon curry powder
  • 10 ounces soup, tomato condensed, about 1 can
  • 14 ounces chicken broth, low salt 1 can, or 1 3/4 cups water
  • 2 tablespoons peanut butter natural
  • 1 tablespoon cilantro freshly chopped
  • 1 x salt to taste
  • 1 x black pepper freshly ground to taste

Method

  • Heat oil in a medium saucepan, saute onion until softened, 3 to 5 minutes.
  • Stir in curry powder and cook, stirring, for 1 minute more.
  • Add condensed tomato soup and broth or water.
  • Bring to a simmer.
  • Whisk in peanut butter and cilantro.
  • Season with salt and pepper.
  • Serve hot.
