Ingredients
- 6 to 7 lb. cut up chicken (with skin and fat removed)
- 1 c. soy sauce
- 1 c. vinegar
- 1 Tbsp. peppercorns
- 4 bay leaves
- 10 cloves garlic (with skin off)
Method
- In a large roasting pan (don't use an aluminum pan), place cut up chicken. Add remaining ingredients.
- Stir so all the chicken gets coated with liquid.
- Bake in covered roaster for 3 hours in a 275° oven. Turn occasionally so chicken is done evenly. Serve with rice and broccoli.
