Ingredients
- 2 tsp. butter
- 1 onion, chopped fine
- 1 clove garlic
- 2 c. chopped leeks (use some green tops)
- 3 c. sliced potatoes
- 2 tsp. flour
- 8 c. beef broth
- 1 c. milk or cream
- salt and pepper to taste
Method
- Melt butter in large pot.
- Add onion and garlic.
- Cook about 5 minutes (do not brown).
- Add leeks; cook 5 minutes more.
- Add potatoes; add flour.
- Add seasoning and hot beef broth.
- Bring to boil and simmer until done.
- Add chopped chives and parsley when serving.
- Makes 8 servings.
