Ingredients
- 1 acorn and 1 or 2 butternut squash
- 1 c. water
- 1 small can evaporated milk
- 3 to 4 c. milk
- 1 1/2 sticks margarine or butter
- nutmeg, allspice and cinnamon
- salt and pepper
- 2 Tbsp. flour
- 2 Tbsp. oil, bacon fat or butter
Method
- Melt oil or fat in heavy skillet.
- Add flour; stir constantly over low heat until dark brown, but not burned.
- To this roux, add seasonings, stock to make sauces, gravies, gumbo or whatever.
