Ingredients

  • 1 tablespoon minced onion
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 2 cups half and half
  • 1 pound crab meat fresh, Mendocino is best
  • salt to taste
  • chopped parsley for garnish

Method

  • Saute Onion in butter
  • Add the flour - stir and cook 1 minute
  • Gradually stir in chicken broth + half and half and cook for 5 minutes
  • Break the crab into chunks and add to the broth
  • Salt to taste
  • Heat thoroughly
  • Garnish with parsley and serve immediately
