Ingredients
- 1 tablespoon minced onion
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups chicken broth
- 2 cups half and half
- 1 pound crab meat fresh, Mendocino is best
- salt to taste
- chopped parsley for garnish
Method
- Saute Onion in butter
- Add the flour - stir and cook 1 minute
- Gradually stir in chicken broth + half and half and cook for 5 minutes
- Break the crab into chunks and add to the broth
- Salt to taste
- Heat thoroughly
- Garnish with parsley and serve immediately
