Ingredients

  • 2 whole Medium-large Bananas, Peeled
  • 2 whole Large Eggs
  • 3 Tablespoons Milled (ground) Golden Flaxseed
  • 1/2 teaspoons Cinnamon (optional)

Method

  • 1. In a medium bowl, mash the bananas until mostly smooth. A few lumps are fine but you don't want it to be super chunky.
  • 2. Using a fork or whisk, beat in eggs.
  • 3. Stir in flax seed and cinnamon (if using).
  • 4. Preheat a greased skillet or griddle on a medium heat.
  • 5. Once hot, turn the heat down to a medium/medium low setting and pour pancake batter on using about 1/4 cup-1/3 cup batter per pancake.
  • 6. Once pancakes begin to hold their form (about the 5 minute mark) flip them over and continue to cook another 3-5 minutes. My pancakes took a total of 8 minutes but if you are using lower heat, it might take another minute or two.
  • 7. Enjoy with maple syrup, honey, peanut butter, etc.
