Ingredients

  • 4 Medium Red Potatoes (cubed 1")
  • 2 Large Sweet potatoes or yams (cubed 1")
  • I medium onion (quartered)
  • 2 small Green Zuccini (sliced 1/2" thick)
  • 1 tsp. Kosher Salt
  • 1/2 tsp. Pepper (fresh ground)
  • 1 tbsp. Chopped garlic
  • 1/2 cup melted butter
  • 1 cup mozzarella cheese (shredded)or you may use any type of cheese you like

Method

  • Wash, peel and cube potatoes to 1". Quarter onion. Slice zuccini to 1/2" thickness. Place all veggies into 2 qt. cassarole dish. Pour melted butter on top. Add salt, pepper and garlic. Stir all together. Sprinkle cheese on top. Cover and bake at 350 degrees for 45 mninutes or until potatoes are tender. Serve.
