Ingredients
- 2 to 2 1/2 lb. zucchini squash, cut into small pieces, cooked until tender and well drained
- salt and pepper to taste
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 large jar Ragu spaghetti sauce
- 1 (4 oz.) can sliced mushrooms
- 1 (14 oz.) pkg. Mozzarella cheese
Method
- Add salt and pepper to taste to squash.
- Saute onion and green peppers in butter.
- Combine onion and green peppers with all other ingredients in large bowl.
- Pour into Pam-sprayed casserole dish. Sprinkle with Parmesan cheese.
- Bake at 350° for 30 to 35 minutes. Tasty when served over rice.
