Ingredients

  • 2 to 2 1/2 lb. zucchini squash, cut into small pieces, cooked until tender and well drained
  • salt and pepper to taste
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 large jar Ragu spaghetti sauce
  • 1 (4 oz.) can sliced mushrooms
  • 1 (14 oz.) pkg. Mozzarella cheese

Method

  • Add salt and pepper to taste to squash.
  • Saute onion and green peppers in butter.
  • Combine onion and green peppers with all other ingredients in large bowl.
  • Pour into Pam-sprayed casserole dish. Sprinkle with Parmesan cheese.
  • Bake at 350° for 30 to 35 minutes. Tasty when served over rice.
