Ingredients

  • 3 sliced yellow squash
  • 1/2 c. onion, chopped
  • 1/4 c. bell pepper, chopped
  • 1 small jar Mexican cheese dip
  • 1 c. crushed crackers
  • 1 egg
  • salt and pepper
  • 2 strips bacon
  • 3/4 c. water
  • 1/2 c. grated cheese

Method

  • Cook squash in water until tender.
  • Saute bacon, onion and bell pepper until bacon is crisp.
  • Crumble bacon.
  • Drain excess water from squash.
  • Add all ingredients together and bake in a 2-quart casserole dish for 20 minutes at 350°.
  • Sprinkle grated cheese on top.
  • Bake 3 to 5 minutes more.
