Ingredients
- 3 sliced yellow squash
- 1/2 c. onion, chopped
- 1/4 c. bell pepper, chopped
- 1 small jar Mexican cheese dip
- 1 c. crushed crackers
- 1 egg
- salt and pepper
- 2 strips bacon
- 3/4 c. water
- 1/2 c. grated cheese
Method
- Cook squash in water until tender.
- Saute bacon, onion and bell pepper until bacon is crisp.
- Crumble bacon.
- Drain excess water from squash.
- Add all ingredients together and bake in a 2-quart casserole dish for 20 minutes at 350°.
- Sprinkle grated cheese on top.
- Bake 3 to 5 minutes more.
