Ingredients
- 3 to 4 c. sliced zucchini squash
- 2 grated carrots
- 1 grated medium onion
- 1 c. sour cream
- 1 small pkg. Pepperidge Farm stuffing mix
- 1/4 lb. butter
- 1 can cream of chicken soup
Method
- Melt butter; mix in stuffing mix.
- Parboil squash; drain.
- Mix squash with carrots, onions, sour cream and soup and 1/2 of stuffing.
- Spread in a casserole dish; sprinkle remaining stuffing on top.
- Bake 45 minutes at 350°.
