Ingredients
- 3 to 4 c. thinly sliced, unpeeled zucchini squash (about 4 or 5 small ones)
- 1 c. prepared biscuit mix
- 1/2 c. onion, finely chopped
- 1/2 c. Parmesan cheese, freshly grated
- 2 Tbsp. parsley, chopped fine
- 1/4 tsp. oregano
- salt and pepper to taste
- 1/2 c. salad dressing
- 4 eggs, lightly beaten
Method
- Combine all ingredients.
- Pour into a buttered 9 x 13-inch casserole.
- Bake at 350° for 30 minutes.
- Cool slightly and cut into 1 1/2 inch squares.
- Serve warm, also good cold.
