- 4 eggs
- 1/2 c. vegetable oil
- 1/2 c. chopped onion
- 1/2 c. Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 2 Tbsp. parsley
- 1/2 tsp. seasoned salt
- 1 clove garlic, chopped
- 1 c. biscuit mix
- 3 c. zucchini, unpeeled and sliced thin
Method
- Beat eggs; add oil, onion, cheese, parsley, salt, oregano, seasoned salt, pepper and garlic.
- Stir in biscuit mix and fold in zucchini.
- Spread in greased 9 x 13-inch pan.
- Bake at 350° for 25 minutes.
- Cut into squares.
- Serve hot or cold.
- Serves 30 to 40 as appetizer.
