Ingredients

  • 4 eggs
  • 1/2 c. vegetable oil
  • 1/2 c. chopped onion
  • 1/2 c. Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 2 Tbsp. parsley
  • 1/2 tsp. seasoned salt
  • 1 clove garlic, chopped
  • 1 c. biscuit mix
  • 3 c. zucchini, unpeeled and sliced thin

Method

  • Beat eggs; add oil, onion, cheese, parsley, salt, oregano, seasoned salt, pepper and garlic.
  • Stir in biscuit mix and fold in zucchini.
  • Spread in greased 9 x 13-inch pan.
  • Bake at 350° for 25 minutes.
  • Cut into squares.
  • Serve hot or cold.
  • Serves 30 to 40 as appetizer.
