Ingredients

  • 1 1/4 or 1 1/2 lb. Italian sausage (sweet or hot)
  • 2 c. celery (1/2-inch pieces), cut on an angle
  • 2 c. zucchini, sliced into 1/2-inch pieces
  • 1 c. chopped onion
  • 2 green peppers (in 1/2-inch pieces)
  • 2 (28 oz.) cans tomatoes (whole), peeled
  • 2 tsp. salt
  • 1 tsp. Italian seasoning
  • 1 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1 tsp. sugar
  • 1/4 tsp. basil

Method

  • Brown sausage in a large skillet.
  • Drain off excess fat.
  • Put celery, onion, green pepper and tomatoes and add all seasonings in large pot and cook while sausage is browning, then add sausage and cook for 10 minutes or so.
  • Stir occasionally.
  • Add zucchini and simmer covered until vegetables are soft, not crunchy.
  • Do not let the vegetables get mushy.
  • Makes 3 1/2 quarts.
