- 1 1/4 or 1 1/2 lb. Italian sausage (sweet or hot)
- 2 c. celery (1/2-inch pieces), cut on an angle
- 2 c. zucchini, sliced into 1/2-inch pieces
- 1 c. chopped onion
- 2 green peppers (in 1/2-inch pieces)
- 2 (28 oz.) cans tomatoes (whole), peeled
- 2 tsp. salt
- 1 tsp. Italian seasoning
- 1 tsp. oregano
- 1/2 tsp. garlic powder
- 1 tsp. sugar
- 1/4 tsp. basil
Method
- Brown sausage in a large skillet.
- Drain off excess fat.
- Put celery, onion, green pepper and tomatoes and add all seasonings in large pot and cook while sausage is browning, then add sausage and cook for 10 minutes or so.
- Stir occasionally.
- Add zucchini and simmer covered until vegetables are soft, not crunchy.
- Do not let the vegetables get mushy.
- Makes 3 1/2 quarts.
