Ingredients

  • 1/2 c. chopped onions
  • 1/4 c. chopped green peppers
  • 3 Tbsp. butter
  • 1/4 c. flour
  • 3 Tbsp. diced pimento
  • 1/4 c. sliced almonds, toasted
  • 1/8 tsp. pepper
  • 2 c. cubed turkey
  • 3 c. cooked rice (white or wild)
  • 1/2 c. shredded Cheddar cheese
  • 2 c. chicken broth

Method

  • Saute onions and green peppers in butter for 3 minutes.
  • Stir in flour. Add chicken broth gradually.
  • Stir and cook over medium heat until thickened.
  • Add pimento, almonds, pepper, turkey and rice. Stir to combine.
  • Pour into 2-quart casserole dish. Top with cheese. Bake at 350° for 20 to 30 minutes.
