Ingredients
- 1/2 c. chopped onions
- 1/4 c. chopped green peppers
- 3 Tbsp. butter
- 1/4 c. flour
- 3 Tbsp. diced pimento
- 1/4 c. sliced almonds, toasted
- 1/8 tsp. pepper
- 2 c. cubed turkey
- 3 c. cooked rice (white or wild)
- 1/2 c. shredded Cheddar cheese
- 2 c. chicken broth
Method
- Saute onions and green peppers in butter for 3 minutes.
- Stir in flour. Add chicken broth gradually.
- Stir and cook over medium heat until thickened.
- Add pimento, almonds, pepper, turkey and rice. Stir to combine.
- Pour into 2-quart casserole dish. Top with cheese. Bake at 350° for 20 to 30 minutes.
