Ingredients
- 4 c. zucchini, thinly sliced
- 1 c. sliced onion
- 2 c. canned tomatoes (with juice)
- 3/4 c. drained, canned mushrooms
- salt, pepper and oregano to taste
- cooked chicken cubes or cooked lean ground beef or turkey
Method
- Saute the zucchini and onion in small amount of oil. Add the tomatoes with juice, mushrooms, salt, pepper and oregano to taste, and chicken or ground beef or turkey.
- Simmer just until heated through.
- Serve in soup bowls and sprinkle with Parmesan cheese. Serves 4 to 5.
