Ingredients

  • 10 c. zucchini
  • 4 large onions
  • 4 large green bell peppers
  • 4 large red bell peppers
  • 1/2 c. salt
  • 2 1/2 c. cider vinegar
  • 4 c. sugar
  • 2 Tbsp. cornstarch
  • 1 tsp. turmeric
  • 1 tsp. nutmeg
  • 1/4 tsp. pepper
  • 2 tsp. celery seed

Method

  • Grind vegetables together
  • and sprinkle with salt.
  • Let set overnight.
  • In morning,
  • rinse
  • and
  • drain
  • well with cold water. Mix
  • together
  • the
  • following
  • ingredients:
  • sugar, vinegar, cornstarch, turmeric, nutmeg, celery seed and pepper. Bring to boil in
  • large
  • kettle.
  • Add vegetables and simmer 30 minutes. Ladle into hot jars.
  • Water bath for 15 minutes.
