- 1/2 c. long grain rice
- 4 oz. shredded Swiss cheese
- 3 eggs
- 1 medium onion, sliced thin
- 1 medium carrot, grated
- 1 medium zucchini, grated
- 1 c. chicken broth
- 1/4 tsp. crumbled marjoram
- 1 c. skim milk
- 1/4 tsp. black pepper
Method
- Cook rice.
- Preheat oven to 350°.
- Grease pie pan.
- Mix rice, 2 tablespoons cheese and one egg.
- Press mixture over bottom and sides of pie pan.
- Bake, uncovered, 5 minutes.
- Cool.
