- 1/2 c. margarine
- 1/4 c. chopped onion
- 4 c. zucchini, sliced thin
- 2 Tbsp. parsley
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 2 eggs
- 8 oz. Mozzarella cheese, shredded
- 1 (8 oz.) pkg. crescent rolls
- 2 tsp. mustard
Method
- Cook together first 7 ingredients until zucchini is tender. Beat eggs and fold in shredded cheese, then mix into zucchini. Line 10-inch pie pan with 8 ounce package crescent rolls.
- Spread crust with 2 teaspoons mustard.
- Pour in mixture.
- Bake at 375° for 18 to 20 minutes.
- Let stand 10 minutes before serving.
