Ingredients

  • 1/2 c. margarine
  • 1/4 c. chopped onion
  • 4 c. zucchini, sliced thin
  • 2 Tbsp. parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 2 eggs
  • 8 oz. Mozzarella cheese, shredded
  • 1 (8 oz.) pkg. crescent rolls
  • 2 tsp. mustard

Method

  • Cook together first 7 ingredients until zucchini is tender. Beat eggs and fold in shredded cheese, then mix into zucchini. Line 10-inch pie pan with 8 ounce package crescent rolls.
  • Spread crust with 2 teaspoons mustard.
  • Pour in mixture.
  • Bake at 375° for 18 to 20 minutes.
  • Let stand 10 minutes before serving.
