Ingredients

  • 1 cup butter, softened
  • 3/4 cup light brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon baking soda

  • 2 cups shredded coconut
  • 1 1/2 cups chopped toasted macadamia nuts

Method

  • Beat together butter, brown sugar, sugar, eggs, and vanilla until light and fluffy.
  • Beat in flour, baking soda, and salt until a stiff dough forms.
  • Stir in coconut and macadamia nuts.
  • Drop by rounded spoonfuls onto parchment-lined cookie sheets.
  • Bake at 375 degrees for10 minutes.
