Ingredients
- 1 cup butter, softened
- 3/4 cup light brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tablespoon vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups shredded coconut
- 1 1/2 cups chopped toasted macadamia nuts
Method
- Beat together butter, brown sugar, sugar, eggs, and vanilla until light and fluffy.
- Beat in flour, baking soda, and salt until a stiff dough forms.
- Stir in coconut and macadamia nuts.
- Drop by rounded spoonfuls onto parchment-lined cookie sheets.
- Bake at 375 degrees for10 minutes.
