Ingredients
- 4 medium to large zucchini
- 1 large onion
- 1 c. Bisquick
- 4 eggs
- 1/2 c. grated Romano or Parmesan cheese
- about 1/4 c. oil
Method
- Dice or chop zucchini into 1/2-inch cubes.
- Chop onion.
- Saute together in oil until soft.
- In large bowl, beat eggs.
- Add cheese, Bisquick and zucchini mixture and mix well.
- Place in greased pie pan and bake at 400° for 1/2 hour.
