Ingredients

  • 3 eggs
  • 1 c. salad oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. zucchini, coarsely shredded
  • 1 (8 oz.) pineapple, crushed and drained
  • 3 c. flour
  • 2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 c. walnuts, chopped
  • 1 c. raisins

Method

  • Beat eggs until thick and foamy.
  • Add oil, sugar and vanilla; beat until thick and foamy.
  • Stir in zucchini and pineapple.
  • Sift together dry ingredients and add.
  • Add walnuts and raisins.
  • Bake at 350° in greased and floured pan for approximately 1 hour or until tested done.
