Ingredients
- 4 c. zucchini, thinly sliced
- 1 onion, sliced
- 1 Tbsp. water
- 2 Tbsp. butter or margarine
- salt and pepper
- 3 Tbsp. Parmesan cheese
Method
- Put all ingredients in a large skillet.
- Cover.
- Bring to boil and cook for 1 minute.
- Uncover.
- Lower heat and turn with spatula until barely tender (about 5 minutes).
- Toss with more Parmesan. Serves 6 to 8.
