Ingredients

  • 1 1/2 c. whole wheat flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt
  • 2 tsp. cinnamon
  • 1 egg
  • 1 c. grated zucchini
  • 1/2 c. honey
  • 1/3 c. vegetable oil
  • 1 tsp. vanilla
  • 3/4 c. chopped walnuts (optional)
  • small amount of milk (optional)

Method

  • Combine all dry ingredients.
  • Make a well in the center. Combine egg, zucchini, honey, oil and vanilla.
  • Mix well and pour into well of dry ingredients.
  • Stir until moist.
  • Stir in walnuts. Spoon into greased muffin pans.
  • Bake at 400° for 18 to 20 minutes.
  • Yields 1 to 1 1/2 dozen.
