Ingredients
- 1 c. dried lemon peel
- 1 c. dry grapefruit peel
- 3 lb. unpeeled zucchini
- 1/8 tsp. soda
- 2 c. water
- 1 c. dried lime peel
- 1 c. dried orange peel
- 3 lb. sugar
- 2 tsp. citric acid
- 1 box pectin
Method
- Grate zucchini on small side of grater.
- Chop fruit peels into small pieces.
- Combine all ingredients except the box of pectin. Bring to a boil, then reduce to a simmer for 30 minutes.
- Add pectin and stirring constantly, boil for 7 minutes.
- Reduce heat to low and keep warm while preparing into hot canning jars.
- Makes 5 pints.
