Ingredients

  • 1 c. dried lemon peel
  • 1 c. dry grapefruit peel
  • 3 lb. unpeeled zucchini
  • 1/8 tsp. soda
  • 2 c. water
  • 1 c. dried lime peel
  • 1 c. dried orange peel
  • 3 lb. sugar
  • 2 tsp. citric acid
  • 1 box pectin

Method

  • Grate zucchini on small side of grater.
  • Chop fruit peels into small pieces.
  • Combine all ingredients except the box of pectin. Bring to a boil, then reduce to a simmer for 30 minutes.
  • Add pectin and stirring constantly, boil for 7 minutes.
  • Reduce heat to low and keep warm while preparing into hot canning jars.
  • Makes 5 pints.
