Ingredients
- 1 lb. ground beef
- 1/2 lb. lasagna noodles
- 2 medium zucchini, sliced
- 4 Tbsp. olive oil
- 3 1/2 c. tomato sauce, seasoned with oregano, basil and garlic
- 1 1/2 c. Ricotta cheese
- 1/4 c. grated Parmesan cheese
Method
- Preheat oven to 350°.
- Cook and drain noodles.
- Simmer zucchini slices in tomato sauce for 10 minutes.
- Brown meat and add to tomato zucchini mixture.
- Place on a layer of noodles.
- Add a layer of Ricotta cheese.
- Repeat layers, ending with a layer of tomato mixture.
- Dribble the olive oil over the top and sprinkle with grated Parmesan cheese.
- Bake at 350° for 1/2 hour.
