Ingredients

  • 1 lb. ground beef
  • 1/2 lb. lasagna noodles
  • 2 medium zucchini, sliced
  • 4 Tbsp. olive oil
  • 3 1/2 c. tomato sauce, seasoned with oregano, basil and garlic
  • 1 1/2 c. Ricotta cheese
  • 1/4 c. grated Parmesan cheese

Method

  • Preheat oven to 350°.
  • Cook and drain noodles.
  • Simmer zucchini slices in tomato sauce for 10 minutes.
  • Brown meat and add to tomato zucchini mixture.
  • Place on a layer of noodles.
  • Add a layer of Ricotta cheese.
  • Repeat layers, ending with a layer of tomato mixture.
  • Dribble the olive oil over the top and sprinkle with grated Parmesan cheese.
  • Bake at 350° for 1/2 hour.
