Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Onion, Peeled And Chopped
  • 1 whole Cauliflower, Cored And Chopped Into Small Florets
  • 500 milliliters Vegetable Or Chicken Stock (use Bouillon For Gluten Free)
  • 1/4 teaspoons Garlic Salt
  • 50 milliliters Double Cream
  • 100 grams Grated Mature Cheddar Cheese Plus Extra For Garnish
  • 1 pinch Salt And Pepper
  • Chopped Chives, For Garnish (optional)

Method

  • 1. Heat the olive oil in a large pot over medium heat. Add the onion and cook gently for 4-5 minutes until it starts to turn translucent. Add in the cauliflower, stock and garlic salt. Bring to the boil and simmer for 15 minutes.
  • 2. After 15 minutes, take pot off the heat and whizz using a hand blender. Put pot back on the heat, add the cheese and cream and stir until he cheese has melted. Season with salt and pepper.
  • 3. Serve with a sprinkling of cheese and black pepper and a few chives if you wish.
