Ingredients
- 1 to 1 1/2 lb. zucchini
- 1 c. flour
- 2 eggs
- 6 to 8 oz. grated Provolone cheese
- 1 tsp. chopped onion
- 1 tsp. fresh dill
- 1 tsp. fresh parsley
- salt and pepper to taste
Method
- Place all ingredients in large bowl.
- Mix well by hand.
- Drop by tablespoons into large skillet with 1 inch of hot oil in it. Cook for a few seconds, then lift up with spatula so they do not stick to skillet.
- They will then float.
- Cook approximately 2 minutes on each side or until golden brown.
- Drain well.
- Serve warm.
