Ingredients

  • 1 to 1 1/2 lb. zucchini
  • 1 c. flour
  • 2 eggs
  • 6 to 8 oz. grated Provolone cheese
  • 1 tsp. chopped onion
  • 1 tsp. fresh dill
  • 1 tsp. fresh parsley
  • salt and pepper to taste

Method

  • Place all ingredients in large bowl.
  • Mix well by hand.
  • Drop by tablespoons into large skillet with 1 inch of hot oil in it. Cook for a few seconds, then lift up with spatula so they do not stick to skillet.
  • They will then float.
  • Cook approximately 2 minutes on each side or until golden brown.
  • Drain well.
  • Serve warm.
