Ingredients

  • 3 to 4 medium zucchini
  • 2 to 4 cloves minced garlic
  • 3 peeled, sliced plum tomatoes
  • oil, salt and pepper

Method

  • Wash the zucchini; do not peel it.
  • Make long cuts, approximately 1/8-inch wide, down the length of each zucchini, leaving the stem end intact.
  • Do not cut through the last 2 inches near the stem.
  • Gently "fan" out the long strips and place a plate on each one to weigh it down and encourage the "fan".
  • Between each slice, tuck several slices or chunks of tomato, minced garlic and sprinkles of salt and pepper.
  • Place in a wide pan; sprinkle with oil and bake for 30 minutes at 350°.
  • Just before serving, shake grated Parmesan cheese over each zucchini.
  • Makes 2 to 4 servings.
