Ingredients
- 1 medium zucchini
- 1 lb. can tomatoes, drained or 4 fresh tomatoes
- 1 can mushroom soup
- 1/4 c. butter
- 1 medium onion
- 1/2 c. shredded Mozzarella cheese
Method
- Butter baking dish.
- Slice zucchini into 1/2-inch slices. Parboil until it changes color; let cool slightly.
- Blend together soup and melted butter.
- Layer zucchini, tomatoes (sliced), thinly sliced onions, sauce and half of the cheese; repeat.
- Bake at 350° for 1/2 hour.
