Ingredients
- 4 oz. sour cream
- 1 can cream of mushroom or celery soup
- 1/2 pkg. Pepperidge Farm stuffing mix or equivalent
- 2 shredded carrots
- 1 small onion, grated
- 3 c. (plus) zucchini, cubed
- 1 stick (1/2 c.) butter, melted
Method
- Mix butter and stuffing mix together.
- Cook zucchini in boiling water for about 2 to 3 minutes and drain.
- Toss 1/2 stuffing mixture, zucchini and other ingredients together.
- Pour into casserole dish.
- Top with remaining stuffing mix and bake, uncovered, for 30 minutes or until bubbly in a 350° oven.
