Ingredients

  • 4 oz. sour cream
  • 1 can cream of mushroom or celery soup
  • 1/2 pkg. Pepperidge Farm stuffing mix or equivalent
  • 2 shredded carrots
  • 1 small onion, grated
  • 3 c. (plus) zucchini, cubed
  • 1 stick (1/2 c.) butter, melted

Method

  • Mix butter and stuffing mix together.
  • Cook zucchini in boiling water for about 2 to 3 minutes and drain.
  • Toss 1/2 stuffing mixture, zucchini and other ingredients together.
  • Pour into casserole dish.
  • Top with remaining stuffing mix and bake, uncovered, for 30 minutes or until bubbly in a 350° oven.
