Ingredients

  • 6 c. sliced peeled zucchini
  • 1 c. cream of chicken soup
  • 1 carrot, grated
  • 1 (7 oz.) Stove Top stuffing mix
  • 1 medium onion, chopped
  • 1 c. sour cream
  • 1/2 c. melted margarine

Method

  • Cook zucchini and onion in boiling water for five minutes; drain. Stir in sour cream, chicken soup and carrot. Add melted margarine. Put half the stuffing in the bottom of a casserole dish. Put zucchini mixture over stuffing and add the remaining stuffing on top. Bake at 350° for 30-35 minutes, uncovered.
