Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 c. nuts
  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (8 oz.) crushed pineapple, drained

Method

  • Combine flour, soda,
  • salt,
  • baking powder, cinnamon and nuts; set aside.
  • Beat eggs;
  • add sugar, oil and vanilla.
  • Beat until creamy.
  • Stir in zucchini
  • and pineapple.
  • Add dry ingredients. Stir until moistened.
  • Bake in 2 loaf pans at 350° for 1 hour. You can ice it with lemon icing or cream cheese icing.
