Ingredients
- 2 lb. all-purpose potatoes, peeled and cut in 1-inch chunks
- 4 cloves garlic, peeled
- 5 strips bacon, cut in 1/2-inch pieces
- 1 c. thinly sliced scallions
- 1/2 c. 1% low-fat milk, warmed
- 1/2 c. reduced-fat sour cream
- 1 tsp. salt
- 1/4 tsp. ground pepper
Method
- Cook potatoes and garlic in a large pot with lightly salted water to cover 13 to 15 minutes until potatoes are fork-tender.
