Ingredients

  • 1 c. butter/margarine
  • 2 c. brown sugar
  • 3 eggs
  • 3 tsp. vanilla
  • 2 c. grated zucchini
  • 2 c. regular flour
  • 1 c. whole wheat flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 c. coarsely chopped pecans

Method

  • Cream together butter and sugar.
  • Beat eggs and vanilla into creamed mixture.
  • Stir in zucchini.
  • Mix together flours, soda, salt, baking powder and cinnamon.
  • Stir lightly into creamed mixture.
  • Add pecans.
  • Pour into 2 greased and floured bread pans and bake until tests done.
  • Bake at 350° for 1 hour.
