Ingredients
- 8 to 10 slices white bread, cubed (no crust)
- 3 c. grated Cheddar
- 2 c. broccoli flowerets
- 1/2 c. chopped onion or chopped red or green pepper or 1 c. mushrooms, all sauteed in 1 to 2 Tbsp. butter
- 2 c. precooked ham, cubed
- 12 eggs
- 3 c. milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- Grease a 9 x 13 x 2 1/2-inch casserole.
- Cover bottom with 2/3 of the bread cubes.
- Sprinkle on half the cheese. Cover with ham, vegetables, remaining bread and cheese.
- Beat eggs. Add milk, salt and pepper; mix.
- Pour over mixture in casserole. Cover and refrigerate overnight.
- Bake at 350° for 35 to 40 minutes.
- Cover with foil during the last part to avoid browning.
- Serves 8 to 10.
