Ingredients

  • 8 to 10 slices white bread, cubed (no crust)
  • 3 c. grated Cheddar
  • 2 c. broccoli flowerets
  • 1/2 c. chopped onion or chopped red or green pepper or 1 c. mushrooms, all sauteed in 1 to 2 Tbsp. butter
  • 2 c. precooked ham, cubed
  • 12 eggs
  • 3 c. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Grease a 9 x 13 x 2 1/2-inch casserole.
  • Cover bottom with 2/3 of the bread cubes.
  • Sprinkle on half the cheese. Cover with ham, vegetables, remaining bread and cheese.
  • Beat eggs. Add milk, salt and pepper; mix.
  • Pour over mixture in casserole. Cover and refrigerate overnight.
  • Bake at 350° for 35 to 40 minutes.
  • Cover with foil during the last part to avoid browning.
  • Serves 8 to 10.
